While many gluten-free foods depend highly upon the use of a lot of uncommon and costly gums, starches, and refined foods, instructor Kim Wilson’s unique approach features only whole, natural ingredients. Recipes include favorites such as Muffins (with variations), Cornbread, Biscuits and Chocolate Chip Cookies.
Kim Wilson has spent over 12 years developing healthful recipes, has several published cookbooks, and most recently has focused her energy on developing whole, natural gluten-free recipes. Kim considers cost, nutritional value, and availability in the selection of her staple ingredients. She hopes that on the other side of her class, you might be able to declare along with her, “What’s the big deal?!
