When the Organic Valley Cooperative expanded from Wisconsin into Vermont, Brent and Regina Beidler of Randolph Center, Vermont, were among the first farmers to sign on. “Our milk was on the first truckload, so we’ve shared in the excitement of watching the cooperative grow,” Regina says.
From mid-May through the end of October, the cows are on pasture, grazing, chewing their cuds, resting, and enjoying the sociability of the herd. They return to the barn, located in the center of the farm’s 140 acres, twice a day for milking. The small herd of Jerseys and Holsteins produces about a ton of organic milk per day.
