Angel Cake with Summer Fruit and Fruit Sauce

An easy, fast, refreshing
dessert that is nutritious too!

Fruit Salad
2 cups mixed
berries
1 nectarine, pitted and sliced
2 Tbs. orange juice

Fruit Sauce
3/4 cup blueberries,
raspberries, or strawberries
1 Tbs. fresh lemon juice
2-4 Tbs. sugar

Angel Food Cake
1/2 angel food
cake, cut into 6 pieces

To make the fruit
salad, combine fruit and orange juice in a bowl.

For the sauce, in
a blender or food processor, purée the 3/4 cup berries and the
lemon juice. Add sugar, one tablespoon at a time, until the desired degree
of sweetness is reached. Strain mixture through a fine sieve, pressing
with a rubber spatula to release the juices.

To assemble the dessert,
place a slice of angel food cake on each of 6 plates. Spoon a portion
of fruit on a corner of the cake slice, allowing some of the fruit to
spill down the side. Drizzle the fruit sauce over and around the fruit
salad.
