Apricot Tilapia

Serves 4

Dried
apricots offer their tangy-sweet flavor to tilapia.

1
1/2 cups (12 oz.) couscous

1/2
lb. dried apricots, finely chopped

tsp. ground coriander

Salt
and ground pepper to taste

Tbs. olive oil

1/4
cup apricot jam

1
Tbs. cider vinegar

Tilapia fillets

Bring
21/2 cups water to a boil. Add couscous, bring to a boil. Cover and
remove from heat. Let sit for 5 minutes.

In
a medium bowl, combine the couscous, apricots, coriander, salt, pepper
and 1 Tbs. of the olive oil. Stir to mix well and keep warm.

Stir
together the jam and vinegar in a small bowl and set aside.

In
a large pot, bring one inch of water to boil. Rub the fish with the remaining
olive oil and place in a steamer basket. Put the steamer basket over the
water. Cover and cook for 4 minutes.

Remove
the lid and brush the fish with the apricot jam/vinegar mixture. Replace
the lid and continue cooking until the fish is just opaque, 4 to 6 minutes
longer.

Spoon
a bed of the warm couscous mixture onto individual plates and top with
the steamed tilapia pieces. Serve immediately.
