Asian-Style Flounder Baked in Parchment

Serves 4

Serve this quick and easy Asian-flavored white fish with white or brown rice and a side of Asian slaw from the Co-op’s Prepared Foods Kitchens.

2 Tbs. soy sauce
2 Tbs. seasoned rice vinegar
4 (5 oz.) flounder fillets
2 tsp. grated peeled fresh ginger
2 scallions, thinly sliced

Special equipment: 4 (16 × 12-inch) sheets parchment paper

Preheat oven to 425ºF. Stir together soy sauce and rice vinegar in a small bowl. With short ends of parchments sheets facing you, place one fillet parallel to a short end in the middle of each sheet. Sprinkle each fillet with one fourth of ginger, scallions, and soy mixture, then fold parchment over fillet and crimp to seal packets. Place on a baking sheet and bake in middle of oven until packets are puffed and browned, about 6 to 8 minutes.
