2 Tbs. soy sauce
2 Tbs. brown sugar
2 Tbs. thawed orange juice concentrate
2 garlic cloves, minced
1 tsp. orange zest, finely grated
1 tsp. fresh ginger, minced
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper, to taste
4 1/2-lb. bone-in chicken breast halves, with skin
Preheat oven to 500ºF.
In a medium bowl,
combine the soy sauce with brown sugar, orange juice concentrate, garlic,
orange zest, ginger, salt, and pepper. Add the chicken breasts and turn
to coat. Transfer chicken to baking dish, skin side up.
Roast chicken in center
of oven for 25 minutes, basting with sauce 4 times, until chicken is just
cooked through and nicely glazed. Broil chicken until browned, about 2
minutes.
