Asparagus 101

Serves 2

Asparagus’ classy elegance may cry out for silver and china, but one of the best ways to enjoy it is to pick it up with your fingers and munch the spears from tip to end. Either way, celebrate the asparagus season with this very simple preparation.

1 bunch asparagus, rinsed and trimmed

1 tsp. butter

Salt, to taste

Fresh lemon juice

Place whole asparagus spears in a large skillet. Add about 1 inch of water. Cover and bring to a boil. Cook about 3-5 minutes, until asparagus is crisp-tender and bright green. Drain. Add butter and salt to the pan, lightly tossing the asparagus to coat. Serve immediately, with a squeeze of fresh lemon juice, if desired.
