Avocado Soup

Serves 4 to 6

1 large avocado, peeled, seeded, and cubed
1 1/2 cups chicken broth
1 clove garlic, crushed
Tabasco sauce, to taste
1 1/2 cups light cream
Salt, to taste
Fresh chives or parsley, chopped

Place the avocado, chicken broth, garlic, and a generous dash of Tabasco sauce in the container of an electric blender. Cover and blend on high speed until thoroughly puréed. Add cream and blend. If the mixture is too thick, thin with a little cream or broth. Correct seasonings, adding more Tabasco and a pinch of salt to taste. Serve well chilled. Garnish with chives or parsley.
