Grilled Chicken Satay with Fresh Pineapple and Peanut Noodle Salad

Meat: 12 oz. boneless
chicken breast
Grocery: 1 pkg. bamboo skewers, 1 bottle peanut sauce, 1 pkg. rice noodles
with sauce
Prepared Foods: 2 cups cut pineapple
Bulk: 1/4 cup dry roasted peanuts
Beverage: Fetzer Gewurztraminer

20 minutes ahead:
Prepare grill. Cut chicken lengthwise into 1/2-inch-thick strips. Thread
chicken and pineapple chunks onto skewers. Place skewers on grill, baste
with sauce, and grill 5 minutes. Turn, baste, and cook 5 minutes more
or until done. Keep warm.

10 minutes ahead:
Prepare noodles according to package directions.

Dinner’s Ready! Top
with coarsely chopped peanuts. Serve noodles with chicken and pineapple
skewers.

Lean chicken is a great source of protein, and each half cup of fruit
provides one serving from the fruit group. To cut the sodium, try using
only half of the rice seasoning packet.
