Grocery: 1 pkg. rice pilaf mix
Produce: 1 lb. green beans, Cut fruit
Prepared Foods: 1 herb roasted chicken, Cranberry Orange Relish
Wine: Excelsior Chardonnay
20 minutes ahead: Prepare pilaf according to package
directions. Heat oven to 250ºF. Loosely cover chicken with foil and warm
in oven until dinner is ready. Wash and trim green beans.
10 minutes ahead: Bring 1 cup water to boil in a saucepan. Place green beans
in a steamer basket and steam 8 minutes. Drain.
Dinners Ready! Slice chicken. Fluff pilaf. Season green beans with salt
and pepper. Serve fruit.
The Dietitian says: Each 1/2 cup of green beans provides a serving from the
veggies group, so have a double serving! The cranberry orange relish is full
of antioxidants.
