In the Recipe Section: Irish Soda Bread

Celebrate St Patrick’s Day with this delicious, easy-to-make quick bread that is often freshly baked for tea or breakfast. This bread is popular throughout Ireland.

Makes 1 loaf

4 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. sugar (optional)
1 tsp. caraway seeds (optional)
2 cups buttermilk

Preheat oven to 450ºF.

In a large bowl, sift together the flour, salt, baking soda, sugar, and caraway seeds (if using.) Add enough buttermilk to make a soft dough. Working quickly, knead the dough lightly, taking care not to overwork it, which will make the bread tough. Form a round loaf and place it on a lightly floured baking sheet. With a floured knife, cut a deep cross in the top of the loaf. Bake loaf in the top third of the oven, about 30 to 45 minutes. When bread is done, the loaf will sound hollow when rapped on the bottom with your knuckles. Wrap immediately in a clean tea towel to stop the crust from hardening too much.
