Frozen: 1 box frozen
winter squash
Grocery: 1 box
couscous
Meat: 1 1/2 lb.

Bulk: 2 oz. raisins

minutes ahead: Cook winter squash as directed on box. Prepare couscous
as directed. When the water is fully absorbed, fluff with a fork and stir
in the raisins. Cover to keep warm.

10 minutes ahead: Pan-fry ham steaks approximately 5 minutes per
side, until fully cooked.

Dinner’s ready: Serve ham steaks with the winter squash and
couscous.

The Dietitian says: Try whole-wheat couscous for the fiber and
nutrients not found in refined couscous. Each half-cup of cooked winter
squash provides a serving from the vegetable group and is a good source
of vitamins A, and C, as well as fiber, all for less than 50 calories.
