Serves 6
3 Tbs. unsalted butter
5 Tbs. dark brown sugar
5 Tbs. dark rum
Pinch ground ginger
Pinch ground nutmeg
1 fresh pineapple, peeled, cored, and cut into chunks
Vanilla ice cream
In a heavy non-stick skillet over medium heat, melt butter and sugar, stirring constantly. Add rum, nutmeg, and ginger, and stir until very thick and syrupy, about 2 minutes. Add pineapple and stir just to heat through. Spoon pineapple and sauce over ice cream.
