Wine Suggestion: Maison Nicolas Rose de Languedoc
Shopping List for 4
Produce: 1 lb. new potatoes, 1/2 lb. green beans, 1 bag salad mix, 2 ripe
tomatoes
Grocery: 1 bottle vinaigrette salad dressing
Seafood: 1 lb. salmon fillet
Wine: Maison Nicolas Rose de Languedoc
30 minutes ahead: Scrub potatoes, place in saucepan, and cover with
water. Bring to a boil, reduce heat, and simmer 10 minutes. Clean and halve
beans. Add beans to potatoes and cook 5 minutes more.
20 minutes ahead: Prepare grill. While potatoes and beans cook, brush salmon
with olive oil. Grill 5 minutes, turn, and grill 5-8 minutes more.
Dinner’s Ready! Quarter potatoes. In a large bowl combine potatoes, beans,
and salad mix. Toss with additional dressing to coat. Slice tomatoes and add
to salad. Break salmon into pieces and add to salad. Toss gently and serve.

of health-promoting phytochemicals, and this menu has green beans and salad
mix, red tomatoes, and white potatoes – very healthful! Salmon is a good source
of heart-healthy omega-3 oils.
