Salsa Fresca

Makes 1 cup

Salsa doesn’t get more basic than this — a fresh, uncooked blend of tomatoes, chilies, cilantro, onions, and lime juice. Serve it with tacos, tortilla chips, or grilled fish or poultry. The recipe is easily doubled or tripled, and is best eaten right after you make it.

1 large ripe tomato, seeded and chopped
1/4 cup finely chopped sweet white onion
1/4 cup minced fresh cilantro
1-3 serrano chilies, seeded, if desired, and finely chopped
1 garlic clove, minced
1 tsp. fresh lime juice, or more to taste
Coarse salt, to taste
Tortilla chips

Stir together all ingredients in a bowl and serve immediately, with tortilla chips.
