Prepared Foods:
2 cups julienne vegetables
Produce: 1 bag
baby greens salad mix
Bulk: Dried herbs,
such as parsley, chives, tarragon
Seafood: 4 cod
fillets
Bakery: 4 rolls
Wine: Arbor Crest
Sauvignon Blanc
20 minutes ahead:
Place the vegetables in a microwaveable casserole. Sprinkle with salt,
pepper, and herbs. Lay the cod on top of the veggies. Sprinkle each piece
with 1 Tbs. wine and dot each with a dab of butter. Cover and microwave
on HIGH for 6-8 minutes.
5 minutes ahead:
Remove casserole and let rest five minutes. Open salad mix, wash, and
divide among 4 plates.
Dinner’s Ready!
Divide fish and veggies onto greens. Serve with rolls.
